Pan Fried Cobia Fillet With Lemon and Herbs

Since I caught some Cobia whilst at TP, I decided to give Cobia meat a go. Take Olive Oil, 3 tbps of french mustard, herbs, dill leaf and marinate the fish fillets and in bowl. Marinate as long as possible for it to take in all the flavour. 

Once ready to cook, melt some butter in a frying pan and once it is hot, add in the minced garlic and fry until golden brown. Add in the fillets and fry. Use a spoon to spread the marinate when frying. Squeeze some lemon juice here if preferred or squeeze it when ready to serve.
